TikTok Viral High-Protein Ground Beef Bowl

When I first saw everyone making this taco seasoned ground beef bowl on tiktok, I was a bit hesitant about it because I wasn’t sure about the cottage cheese. Haha, But once I made it I understood the hype. This is what I call a power bowl. Loaded with protein and quite tasty. I highly recommend.

I do have to say, when my kids came home from school, even though they were excited to try it, they did push the cottage cheese on the side. Maybe it is kid thing to do. Lol.

Ingredients needed

Below is a list of ingredients you will need to make this dish. Full measurements will be in the recipe card.

  • Lean ground beef: Ground turkey or ground chicken will work too.
  • Sweet potatoes: I used 2 medium-sized.
  • Avocado: One large will work, or grab 2 medium. Should be ripe
  • Oil: 2 tbsp olive oil, or you can use avocado oil
  • Cottage cheese: I used 4% fat, but use any you can on hand.
  • Tomato paste
  • Taco seasoning
  • Hot honey
  • Cinnamon
  • Salt and pepper
  • Red chili flakes, optional

How to make it

Below is a quick step-by-step overview of how to make it.

Step 1: Add the diced sweet potatoes to a sheet pan and season with salt, pepper, and cinnamon. Toss to combine.

Step 2: Bake for 18- 20 minutes or until it is fully cooked through.

Step 3: While the potatoes roast, sear the beef for a few minutes and then add the taco seasoning and tomato paste. Toss to combine.

Step 4: Add a bit of hot honey, and cook the seasoned ground beef until fully cooked.

Step 5: Assemble the bowl into 2-4 equal servings: In each bowl, add the roasted potatoes, seasoned ground beef, cottage cheese, and avocado. Drizzle with more honey if desired and garnish with pepper flakes.

Variations

  • You can add some black beans and corn kernels with the sweet potatoes and roast them all together for added fiber and flavor.
  • Use Ground turkey or ground chicken instead of Ground beef.
  • Add in more veggies: You can add a side of air-fried broccoli or add in some chopped zucchini with the ground beef.

Storing and reheating

  • This meal stores well. It is great for meal prepping. If you have leftovers, you can store them in a sealed container in the fridge for up to 4 days. If you decide to freeze, I would recommend not freezing the cottage cheese and avocado. Just add those when ready to serve.
  • To reheat, simply use the microwave. Reheat the beef and roasted sweet potatoes for 60-90 seconds.

  • 1 pound lean ground beef
  • 2 Large sweet potatoes
  • 1 large avocado, or 2 medium
  • 2 tablespoons olive oil, divided, or avocado oil
  • 2 cups Low-fat cottage cheese
  • 1 tablespoon tomato paste
  • 1.3 ounces taco seasoning, 1 packet
  • 3 tablespoons hot honey, divided
  • 1 teaspoon cinnamon
  • Salt and pepper
  • Red chili flakes, optional

Instructions

  • Preheat the oven to 350°F and line a sheet pan with parchment paper.
  • Peel and chop the 2 Large sweet potatoes into 1/4 inch cubes. Place them on the sheet pan, drizzle 1 tablespoon of the 2 tablespoons olive oil, Salt and pepper, and 1 teaspoon cinnamon.

  • Using your hands, toss to combine. Bake for 18-20 minutes or until crispy and cooked through.

  • Meanwhile, cook the beef. In a pan, add olive oil and sear the 1 pound lean ground beef until it is no longer pink. About 2-3 minutes. Then add the 1.3 ounces taco seasoning and 1 tablespoon tomato paste.

  • Cook for another 2 minutes until the flavors meld. Add a tablespoon of the 3 tablespoons hot honey, and mix again. If the beef is too dry to your liking, you can add a bit of water or broth. (depends on how lean the beef is).

  • Assemble the Bowl. Add the roasted sweet potatoes, seasoned ground beef, 1 large avocado (divided equally), and 2 cups Low-fat cottage cheese (1/2 cup in each bowl.
  • Drizzle with more hot honey, and garnish with Red chili flakes if desired. Serve and enjoy.

Notes

  • Instead of ground beef, you can use ground chicken or ground turkey.
  • Serve with more veggies like steamed broccoli, roasted zucchini, or green beans.
  • I used 4% fat cottage cheese
  • Store leftovers in the fridge for up to 4 days.
