I always love making this Cranberry Brie Pull-apart bread during the holidays to impress friends and family. It is easy and simple to make and a crowd-pleaser. Perfect appetizer during the holidays.
As soon as cranberry is in season I get excited to make all thing cranberry especially this cranberry pull apart bread recipe that I make with sourdough bread, cranberry sauce, and brie cheese. My kids love it with a drizzle of honey over it and I thought it would be a nice optional for those who like a touch of sweetness. I usually use my cranberry orange sauce recipe to make it, but you can certainly use store-bought cranberry sauce.

Ingredients needed
Below is a list of ingredients you will need to make the cranberry pull-apart bread. Full measurements are listed further down in the recipe card.
- Sourdough or French boule Bread
- Brie cheese, cut into small squares
- Cranberry sauce , homemade or store-bought
- Olive oil, or melted butter
- Fresh thyme (optional)
- Garlic powder
- Honey, to garnish optional to garnish
- Fresh rosemary to garnish (optional)
How to make it
Preheat oven to 350 F, and line a sheet pan with parchment paper or foil wrap.
Step 1: Using a serrated knife, cut the bread from the top nearly to the bottom in 1-inch diagonal diamonds. Make sure you do not cut all the way through the bread.
Step 2: In a small bowl, combine the oil or butter, garlic powder, and fresh thyme if using. Gently pull the bread open at the cuts, and using a brush, evenly brush the bread with the oil mixture. Adding some in between the cuts.
Step 3: Stuff the bread with cheese squares into all the pockets/slits.
Step 4: Next, add some cranberry sauce into the same spots with the brie cheese.
Step 5: Transfer the bread to the prepared pan and bake for 20-25 minutes or until the brie is melted.
Step 6: Add some rosemary sprigs to garnish. Drizzle with honey if using, and serve.
Recipe notes and tips
- You can make my homemade cranberry sauce or use store-bought.
- If you prefer using melted butter instead of oil you can go ahead.
- I sometimes like to top with chopped pecans or walnuts before baking.
- The drizzle of honey is optional but adds a nice touch, and the kids love it.
- If you do not want to use cranberry sauce, you can use dried cranberries or chopped figs.
- Any bread you want to use will work. Most times, I love using sourdough.

Yes. You can make this cranberry pull-apart bread the day before. Right before you bake it, wrap it well with plastic wrap and place it in the fridge until you are ready to make the following day.
For pulling apart bread, I like to use Sourdough or French bread. You can also use Ciabatta, Italian Bread, or rustic artisan.
Yes. If you do not like brie, you can use another cheese like Camembert, known for its creamy texture similar to brie, havarti, or Triple-Crème Cheese.

- 8 ounces wheel brie cheese , cut into small squares, see notes
- 1 cup cranberry sauce, homemade or store-bought
- 2 tablespoons olive oil or melted butter
- 2 tablespoons fresh thyme, optional
- 1 teaspoon garlic powder
- 2 tablespoons honey, to garnish optional to garnish
- Fresh rosemary, to garnish, optional
Instructions

- In a small bowl, combine the 2 tablespoons olive oil or melted butter, 1 teaspoon garlic powder, and 2 tablespoons fresh thyme if using. Mix gently.
- Gently pull the bread open at the cuts, and using a brush, evenly brush the bread with the oil mixture. Adding some in between the cuts.
- Stuff the bread with the 8 ounces wheel brie cheese squares into all the pockets/slits.
- Next, add about 1 teaspoon of the 1 cup cranberry sauce into the same spots with the brie cheese.
- Transfer the bread to the prepared pan and bake for 20-25 minutes or until the brie is melted.
- Add some Fresh rosemary sprigs to garnish. Drizzle with 2 tablespoons honey if using, and serve.

Notes
- Notes: I felt like 1 (8-ounce) wheel of brie cheese was enough. Feel free to use more and stuff it with more cheese. In that case, you may need to use 12-16 ounces.
- Use any bread of your choice
- Instead of olive oil, you can use butter
- Try adding chopping pecans or walnuts to it as well before baking.
- The honey drizzle is optional but adds a nice touch
- You may or may not use or add fresh herbs.
