I love making these cranberry brie bites during the holidays. They are so fun, easy to make, and the perfect appetizer everyone will reach for I promise.
If you are looking to make bite-size appetizers to serve family and guests for the holidays, your best bet will be cranberry brie bites. You honestly can’t go wrong with these. This appetizer is just so easy to put together too, and can be ready in about 30 minutes. All you need: puff pastry, brie cheese, cranberry sauce, nuts, and maybe honey which can be optional. They are baked to perfection and each bite will be heavenly. Even the kids will love it.
If you do not want to get store-bought cranberry sauce and rather use homemade, then use my orange cranberry sauce.

- Frozen puff pastry: or use crescent dough
- Wheel brie cheese, cooled
- Homemade cranberry sauce, or canned
- Raw pistachios, chopped, or any other nuts like walnuts or pecans.
- Honey
- Nonstick cooking spray
How to make cranberry brie bites
Preheat the oven to 375 F and spray a mini muffin tin pan with cooking spray.
Step 1: Roll out the puff pastry sheet over a floured, flat surface into a large rectangle. Cut the puff pastry sheet evenly into 24 equal squares.
Step 2: Place the puff pastry squares into each one. Push the pastry down with your fingers to create cups.
Step 3: Cut the brie into 24 pieces. The brie should be cold so it isn’t a sticky mess.
Step 4: Place a piece of brie into each of the pastry cups.
Step 5: Evenly add some cranberry sauce over each one.
Step 6: Add a bit of pistachio to each one and bake for 18-20 minutes or until they are golden brown and the brie has melted. Allow them to cool for 5 minutes. Drizzle with some honey, and serve.
Recipe notes
- You may use crescent dough instead of puff pastry. You will need 8 ounces.
- The puff pastry usually comes frozen, leave overnight in the fridge to thaw.
- You can use homemade cranberry sauce or store-bought that’s freshly made or canned.
- Nuts: you do not have to use pistachios. Other nuts like pecans or walnuts can be used.
- Honey is optional if you do not want to use it, but it adds a nice touch.
- You can add a small rosemary twig over each one.

No. The rind of brie is edible and ok to eat so you do not need to cut it out first before baking.
Yes. You can make it a day ahead. Place the puff pastry dough in the muffin tin pan, add the brie bites and cranberry sauce. Top with nuts and cover with plastic wrap and store in the fridge till the next day when you are ready to bake it.
Brie bites can be served hot or at room temperature. Either way, they taste so good if they are warm.
No. The brie can be placed in the fridge to keep its shape so its not too soft. You do not have to keep it at room temperature. If you plan on cutting the brie cheese, I recommend you leave it in the fridge and it stays cold so its easier to cut.
Yes. I recommend you store leftovers in an airtight container in the fridge instead of leaving them on your kitchen counter. They can be stored for up to 3 days.

Ingredients
- 2 sheets puff pastry , thawed, they come frozen
- 8 ounces wheel brie cheese, cooled
- 1 cup homemade cranberry sauce, or canned
- ¼ cup raw pistachios, chopped
- 3 tablespoons honey
- Nonstick cooking spray
Instructions
- Preheat the oven to 375 F.
- Roll out the 2 sheets puff pastry sheets (thawed) over a floured, flat surface into a 10 x 14-inch rectangle. Cut the puff pastry sheets evenly into 24 equal squares.
- Spray a 24-piece mini muffin pan with Nonstick cooking spray and place the puff pastry squares into each one. Push the pastry down with your fingers to create cups.
- Cut the 8 ounces wheel brie cheese into 24 pieces. The brie should be cold, so it isn’t a sticky mess.
- Place a piece of brie into each of the pastry cups.
- Add equal amounts of the 1 cup homemade cranberry sauce over each one.
- Next, add a bit of the ¼ cup raw pistachios to each one and bake for 18-20 minutes or until they are golden brown and the brie has melted.
- Allow them to cool for 5 minutes. Drizzle with some of the 3 tablespoons honey, and serve.
