These easy Date and Walnut Energy Balls are made with just 3 simple ingredients for the perfect healthy snack. Naturally sweet, chewy, no-bake, and kid-friendly.
1cupdatesabout 10-12, soft (if dates are not fresh and soft, soak them in hot water for 10 minutes)
1½cupwalnutsor raw cashews
⅓cupshredded coconut
Instructions
Add the dates and walnuts to a food processor. Blend until the mixture comes together and looks like a rough dough.
Stop and scrape down the sides as needed.
Scoop out the dough and divide it into 14 equal portions. Roll each one into a ball with your hands.
Roll each ball in the shredded coconut until coated, then place on a plate or tray.
Refrigerate for at least 30 minutes before serving. This firms them up and makes them easier to eat.

Nuts: You can use walnut, cashew, almonds, or pecans.
Tip on dates: If your dates are dry or firm, soak them in hot water for 10 minutes and drain well before blending. This makes a huge difference in texture.
Variations
Try mixing in a tablespoon of cacao powder for a chocolatey version
For a deep nutty flavor, add 2 tablespoons of almond butter.
Add in a teaspoon of cinnamon for a warm spice flavor.
Consider adding Chia seeds and flaxseed to boost fiber and omega-3s. Do 1 tablespoon of each. If the mixture is a bit dry, then add in 1-2 tablespoons of honey or 1-2 additional dates.
