You will love waking up to this delicious Peach Oatmeal Bake! It's perfectly sweet and bursting with fresh juicy peaches. Prep it in a matter of minutes in one bowl! This satisfying breakfast is so easy and tasty that you’ll want to make it on repeat.
2 1/4cupsunsweetened almond milk or other preferred milk
1/3cupmaple syrup
2tablespoonscoconut oilmelted
1teaspooncinnamon
2tablespoonsground flaxseed
2tablespoonschia seeds
1teaspoonbaking powder
1teaspoonvanilla extract
pinchsalt
3medium ripe peaches2 chopped and one sliced for topping, divided or 1 cup of each
1/4cupraw almondschopped
Instructions
Preheat the oven to 350ºF. In a baking dish, add oats, cinnamon, chia seeds, ground flaxseeds, salt, and baking powder. Mix to combine.
Next, add almond milk, vanilla extract, maple syrup, coconut oil, salt and 1 cup chopped peaches. Mix everything to combine.
Top with sliced peaches. Bake for 45-50 minutes, or until the top is golden. Over the last 10 minutes of baking, sprinkle with the chopped almonds.
Remove the baked oatmeal from the oven and let it sit for 5-10 minutes to allow to cool before slicing into servings.
Serve baked oatmeal with a drizzle of maple syrup or warm milk. (It’s not too sweet, so you may want to drizzle on some maple syrup.)

Storing leftovers: Place any leftover baked oatmeal in an airtight container or wrap it in plastic wrap and store it in the fridge for up to 4 days.
Freeze: Place individual servings in an airtight, freezer-safe container or freezer-safe bag for up to 3 months.
Reheat: Place individual slices in the microwave for about 1 to 4 minutes, depending on whether it’s at room temperature or frozen. You can also rewarm in the oven at 350°F for 15-20 minutes.
