1/2small bunch of fresh dill weedor fresh basil, parsley, cilantro
1/4cupextra-virgin olive oil
2tablespoonsbalsamic vinegar
1tablespoonhoney
Kosher salt and ground black pepperto taste
Instructions
Slice the 4 large ripe tomatoes into 1/3-inch thick slices, finely chop the 2 garlic cloves, 1/4 small white onion, and herbs of choice. (either basil or 1/2 small bunch of fresh dill weed)
Combine the garlic, onion, herbs, 1/4 cup extra-virgin olive oil, 2 tablespoons balsamic vinegar, and 1 tablespoon honey in a small bowl.
Lay the tomatoes on a shallow platter and season with Kosher salt and ground black pepper.
Spoon over the garlic-herb marinade.
Cover with cling film and refrigerate for at least 1 hour prior to serving.

Serving size: one tomato - however many slices you get out of one tomato
Dill: If you do not like dill, you don't have to use it. You can swap it with fresh basil. It is also absolutely delicious if you don't like dill.
Use avocado oil in place of olive oil
Use ripe but hard-to-the-touch tomatoes; do not use soft/mushy tomatoes
