Cucumber Tomato Feta Salad
Simple salad made with fresh cucumbers, tomatoes, and feta. Easy, quick, and ready in 15 minutes.

Ingredients

pound
Roma tomatoes
4-5
garden cucumbers

red onion
1/4

parsley

feta cheese
For the dressing:
2
tablespoons
extra virgin olive oil
2
tablespoons
fresh lemon juice
2
garlic cloves
minced
1/4
teaspoon
ground cumin
Sea salt and ground pepper
to taste
Instructions
To a small jar, add all the dressing ingredients and shake vigorously to emulsify.
Chop the tomatoes and cucumbers, slice the onion, mince the parsley and crumble the Feta cheese.
To a salad bowl, add all the prepped ingredients and pour over the dressing. Toss well to combine.
Garnish with extra cheese and serve immediately.

If you want to cut the feta cheese into bigger sizes you can (like the video)
You can use avocado oil instead of olive oil
make the dressing ahead if you prefer.
Store leftovers in an airtight container for 3 days
