Chicken Artichoke Pasta
Simple creamy pasta dish made with Boursin cheese, chicken, and artichokes. Ready in just 3o minutes.

Ingredients

chicken breast
sliced
Garlic salt and pepper
to taste

olive oil

garlic cloves

pasta of choice

Boursin cheese

jar artichoke hearts
drained and chopped
Instructions
Cook the pasta according to the package directions. Once cooked to al dente, reserve 1 1/2 cups of the pasta water, then drain.
Slice the chicken and season with garlic salt and pepper.
Heat the oil in a large skillet and cook the chicken until golden brown and cooked through.
Add the garlic and cook for 1 minute more.
Add the pasta water and Boursin cheese. Stir until the sauce is creamy.
Add the artichokes, and cooked pasta and combine with the sauce.
Notes
Use any pasta of your choice. Some healthier choices can be lentil or chickpea pasta
Use lean chicken breast if possible. You may also use chicken thighs or swap them with other proteins of your choice like shrimp.
instead of Boursin cheese, use 8oz of lite cream cheese.
