Peel and slice the potatoes as thin as possible. Thinly slice the sweet potatoes about 1/8” thin using a mandolin slicer.
Place the sliced potatoes in a medium bowl and add salt, pepper, and oil.
Toss them together with your hands or spatula until they are all lightly coated.
Place the sweet potato slices in a single layer in the air fryer basket. They can be close but do not overlap and crowd the air fryer. You may have to work in batches.
Air Fry at 350°F for 8 to 10 minutes. The timing will vary based on your air fryer or the potatoes' thickness.
Open the air fryer halfway through the cooking time, and either toss them lightly or shake the basket.
Once the potatoes are cooked, remove them from the air fryer basket and add them to a cooling rack. If you are working in batches, then air fry the next batch.
Allow the chips to cool for 5-10 minutes on a rack. This will allow them to get more crispy.
Serve with your favorite dip and enjoy.
Notes
Use a mandolin slicer for even thickness. Evenly thin slices around 1/8 inch are key for chips that crisp up uniformly in the air fryer.
Don't overcrowd the air fryer basket. Place the sweet potato slices in a single layer with a little room between them. Overcrowding leads to steaming instead of crisping. Work in batches as needed.
Let the chips cool completely before eating. The chips will continue crisping as they cool down on a rack or plate. Waiting until fully cooled gives you maximum crunch.
