Easy 3 Ingredient Peanut Butter Cookies

- 1 cup creamy peanut butter
- 1 cup coconut sugar or brown sugar **see notes
- 1 large egg
- 1 teaspoon vanilla extract optional
- Salt flakes optional topping
Preheat oven to 350° FIn a medium bowl, add the peanut butter, egg, sugar, and vanilla extract.
Using a hand mixer, mix the ingredients until they are nicely combined and creamy looking. At this point, you may place the dough for a couple of hours in the fridge so it thickens up and easier to handle.
Line a sheet pan with parchment paper. Using a scooper or a spoon, scoop out about 1-inch of cookie dough. Using your hands roll them into a ball and place them on the sheet pan.
Repeat the last step until you have rolled all the dough and lined it up on the sheet pan. Space then out a bit.
Using a fork, press down and flatten each of the cookie balls in opposite directions to make a pattern. Place in the preheated oven and baked for 10-12 minutes or until they are golden crisp on the sides.
Remove the cookies from the oven and allow them to cool for about 3-5 minutes before transferring them to a rack or plate. Enjoy.
- Makes about 12 cookies, the serving size is one cookie
- Use creamy peanut butter
- Once you mix the dough, you may place it in the fridge so the dough gets a bit thicker and easier to handle.
- Allow the egg to reach room temperature.
- The vanilla extract is optional but recommended
- Allow the cookies to cool off completely before serving.
