Drizzle a round baking dish with 2 teaspoons olive oil and use your fingers to spread it throughout the bottom.
Lay in your 1 large tortilla and press to fit the base, but also curl up at the edges.
Crack the 2 large eggs and add 1/3 cup cottage cheese, half of the 1/3 cup shredded mozzarella cheese, half of the 1/3 cup chopped & cooked turkey bacon, Kosher salt and ground pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder.
Using a fork, stir well to combine.
Sprinkle it with the remaining bacon.
Bake for 12-15 minutes, or until the eggs are set in the center.
Garnish with 1 tablespoon fresh chopped parsley, if desired.
Notes
Use a smaller tortilla if yours won’t stay curled up in the dish.
Let it cool a bit before slicing—this helps it firm up and makes it easier to serve.
Add parchment paper under the tortilla if your baking dish is prone to sticking.
