This creamy homemade tahini salad dressing is made with smooth tahini, fresh lemon juice, garlic, olive oil, and a touch of honey or maple syrup. It's easy to make and perfect for salads, roasted vegetables, grain bowls, and wraps.
In a small mixing bowl, add all the dressing ingredients and whisk until smooth and uniform. (¼ cup smooth tahini, 3 tablespoons water, 2 tablespoons olive oil, 2 tablespoons fresh lemon juice, ½ teaspoon Dijon Mustard, 2 teaspoons maple syrup, 1 garlic clove, and ¼ teaspoon salt)
If the dressing is too thick, add 1-2 tbsp of water at a time until it reaches the desired consistency. Pour into a jar, use as needed, and store the rest in the fridge.
Notes
Use smooth and runny tahini instead of the dry ones that are hard to mix. This will depend on the brand. I like to use Cedar’s or Trader Joe’s.
Makes ⅔ cup - about 8 tablespoons
Stir the tahini well before measuring if the oil has separated.
Add the water gradually until the dressing reaches your preferred consistency.
Fresh lemon juice gives the best flavor.
The dressing will thicken slightly in the refrigerator. Add a little water and whisk before serving.
Use honey or maple syrup depending on your preference.
Store in an airtight container in the refrigerator for up to 5 days.
