Instructions
Preheat the oven to 350F and line a 9x5 loaf pan with parchment paper or cooking spray.
In a bowl, add the mashed 3 large ripe bananas, melted ¼ cup unsalted butter or coconut oil, 1 large egg, ¼ cup Greek yogurt, ⅓ cup brown sugar, and 2 teaspoons vanilla extract. Whisk to combine and set aside.
In a separate bowl, mix together the 1 ½ cups all-purpose flour, 1 teaspoons baking powder, 1/2 teaspoons baking soda, and ¼ teaspoons salt.
Mix the flour mixture and the egg mixture with a spatula until combined. Do not overmix.
Add in the ½ cup chopped strawberries and 1/3 cup dark chocolate chips if using. Fold them into the batter.
Place the batter in the prepared pan and top with more chocolate chips and sliced strawberries if you like.
Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to cool fully before slicing. Serve and Enjoy.
Notes
Instead of strawberries, you can use blueberries.
Bananas should be ripe for the best flavor.
Any other neutral oil will work instead of melted butter.
Allow the banana bread to cool before slicing and serving.
