These Smash Burger Tacos are crispy, cheesy and packed with all the flavors of a classic burger in taco form! They're so easy to make, ready in under 30 minutes, and perfect for customizing with all your favorite burger toppings.
In a bowl, mix 1 pound lean ground beef with 1 tablespoon taco seasoning, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon kosher salt, and ½ teaspoon black pepper.
For the burger sauce: In a small bowl, stir together ½ cup mayonnaise, 2 tablespoon ketchup, 1 tablespoon Dijon mustard, 1 tablespoon gherkin pickle brine or pickle relish and a pinch of Kosher salt & black pepper. Set aside.
Take a small handful of seasoned beef and press a thin layer directly onto one side of each of the 5 tortillas (about 2–3 tbsp per tortilla).
Heat a skillet over medium heat.
Cooking one by one, place tortillas, meat side down, into the pan. Press lightly with a spatula and cook 3–4 minutes until the meat is browned and crispy.
Flip the tacos so the tortilla side is down and immediately sprinkle 1 cup shredded cheddar over the cooked meat.
Cook 1 more minute until cheese melts and tortilla crisps slightly.
Remove from the pan and add toppings (1 1/4 cups shredded lettuce, 1 small red onion, 2/3 cup freshly diced tomatoes, and 1/2 cup Baby Pickles), plus a drizzle of burger sauce.
Fold and enjoy while hot and crispy.

Gluten-free: Use gluten-free corn tortillas. Make sure that your taco seasoning is also gluten-free.Different protein: You can use ground chicken or turkey in place of the beef mince.Storage: Store leftover tacos (without the toppings or burger sauce) in an airtight container in the fridge for up to 3 days.
