  • 3 tablespoons olive oil
  • 2 lemons juiced and 1 zested
  • 2-3 garlic clove minced
  • 2 tablespoons fresh oregano minced, or 1 tsp dried oregano
  • 2 tablespoons honey
  • Kosher salt and ground pepper to taste
  • 4 chicken breasts large, skinless and boneless, cut into 2-inch pieces
  • Lemon wedges to serve
  • 8 soaked bamboo skewers

  • To a large bowl, add all the ingredients, besides the chicken and mix well.
  • Next, add the chopped chicken and toss to get all pieces coated. Cover and marinate into the fridge for up to one hour.
  • Thread the marinated chicken pieces onto the prepared skewers.
  • Heat a grill pan or an outdoor grill over medium-high heat. Grill for 6-8 minutes in total, or until the chicken is fully cooked through.
  • To the same preheated grill, add the lemon wedges. Grill for 1-3 minutes, or until grill marks appear.
  • Serve the chicken skewers with grilled lemon wedges and enjoy!

  • Store the chicken kabob leftovers in an airtight container in the refrigerator for up to four days.
  • Feel free to use maple syrup in place of the honey.
  • Be sure to soak the bamboo skewers in water before threading with the chicken.
  • Make sure to use a meat thermometer to make sure the chicken is cooked all the way through.
  • Be careful not to leave this chicken in the marinade too long or the texture of the chicken will off.
