Princess Diana's Overnight Oats are a simple version of Bircher muesli made with rolled oats, fresh orange juice, Greek yogurt, apple, blueberries, honey, and walnuts. Prepare them the night before for an easy breakfast the next morning.
To a mixing bowl, add the 1 cup rolled oats, 1 cup freshly squeezed orange juice, 1 tablespoon orange zest, 1 tablespoon raw honey, and 1/4 teaspoon cinnamon. Mix well to combine. Cover with cling film and refrigerate overnight.
Just before serving, cut the 1 medium apple of choice and toss it with the juice of 1 lemon.
Add it to the bowl with the overnight oats together with the 1 cup full-fat Greek yogurt, 1 cup fresh blueberries, 1 teaspoon vanilla extract, and 1/2 cup toasted walnuts or pecans.
Mix well to combine. Transfer into jars or jugs and serve.

Use old-fashioned rolled oats for the best texture.
Freshly squeezed orange juice gives the best flavor.
Honeycrisp is my favorite apple, but any crisp apple will work.
You can shred the apple instead of chopping it, which is closer to the original version.
Add the walnuts just before serving if you want them to stay crunchy.
Soak the oats for at least 4 to 6 hours, but overnight is best.
Store leftovers in the refrigerator for up to 3 days.
For a dairy-free version, use thick dairy-free yogurt and maple syrup or agave instead of honey.
