These overnight oats were one of Princess Diana’s go-to breakfasts. It's light, fruity, and easy to make with simple ingredients. Perfect for a healthy morning treat.
To a mixing bowl, add the 1 cup rolled oats, 1 cup freshly squeezed orange juice, 1 tablespoon orange zest, 1 tablespoon raw honey, and 1/4 teaspoon cinnamon. Mix well to combine. Cover with cling film and refrigerate overnight.
Just before serving, cut the 1 medium apple of choice and toss it with the juice of 1 lemon.
Add it to the bowl with the overnight oats together with the 1 cup full-fat Greek yogurt, 1 cup fresh blueberries, 1 teaspoon vanilla extract, and 1/2 cup toasted walnuts or pecans.
Mix well to combine. Transfer into jars or jugs and serve.
Notes
Use rolled oats if possible and not overnight oats.
It would be best if you use fresh orange juice instead of bottled.
You can shred the apples instead of chopping.
Cinnamon is optional. Cardamom also works, or you can skip.
Store the overnight oat jars in the fridge for up to 3 days.
