This Oat Flour Banana Bread is moist, sweet, and wholesome, made with oat flour, coconut sugar, and coconut oil. Studded with chocolate chips, it's the perfect on-the-go snack or sweet afternoon treat.

Instructions
Preheat oven to 350°F. Grease an 8x4-inch loaf pan with cooking spray and line with a piece of parchment paper.
Add the 3 large ripe bananas (mashed), ½ cup coconut sugar or brown sugar, ⅓ cup coconut oil (melted), 3 medium eggs, and 2 teaspoons vanilla extract in a medium bowl. Mix well to combine. Set aside.
In a separate bowl, mix the dry ingredients: 2 cups oat flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and ¼ teaspoon salt.
Pour the dry ingredients over the wet ingredients. Use a spatula to mix until no floury patches remain.
Fold in the ⅓ cup dark chocolate chips, if using. Pour into the prepared loaf pan and sprinkle a few more chocolate chips on top, if you like.
Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before removing from the pan to cool completely.

Freeze: Let cool, then wrap in plastic wrap and foil. Freeze for up to 3 months. Thaw at room temperature before eating.
