This Million Dollar Chicken Casserole is creamy, cheesy, and easy to make with rotisserie chicken, peas, Greek yogurt, and cottage cheese. Topped a buttery Ritz cracker topping for an easy family dinner.
Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
Add all the creamy sauce ingredients to a blender (1½ cups cottage cheese, ¾ cup plain Greek yogurt, ½ cup chicken broth, 1 tablespoon cornstarch, 1 teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon dried thyme, ½ teaspoon dried parsley, ½ teaspoon black pepper, ¾ teaspoon salt, 1 teaspoon Dijon mustard, and 1 tablespoon lemon juice). Blend for about 1 minute until completely smooth and silky.
Transfer the blended mixture to a large bowl and whisk in the 1 cup shredded mozzarella and ¼ cup grated Parmesan until well combined.
Fold in the shredded 1 rotisserie chicken, 2 cups frozen peas, and 5 green onions until everything is evenly coated in the creamy sauce.
Spread the mixture evenly into the prepared baking dish.
In a small bowl, combine the crushed 30 Ritz crackers, 2 tablespoons melted butter, 2 tablespoons grated Parmesan, and 1 tablespoon chopped parsley. Sprinkle the topping evenly over the casserole.
Bake for 25-30 minutes, until the filling is bubbling around the edges and the topping is deeply golden and crisp.
Let the casserole rest for 10 minutes before serving.

Serving size: About 1/6 of the casserole
Use about 5 cups of shredded rotisserie chicken.
There is no need to thaw the frozen peas before adding them.
Blend the cottage cheese and Greek yogurt mixture until completely smooth.
Don't crush the Ritz crackers too finely so the topping stays crisp.
Let the casserole rest for 10 minutes before serving.
Leftovers can be stored in the refrigerator for up to 4 days.
For freezing, add the Ritz topping after thawing for the best texture.
