Fresh, sweet, and slightly spicy, this Mango Pico de Gallo is made with juicy mango, tomatoes, red onion, jalapeño, cilantro, and lime juice. It's the perfect salsa for tacos, grilled meats, seafood, or tortilla chips.
1largemangopeeled and diced (or 2 medium- about 1.5 cups)
1cupdiced cherry tomatoesor about 2 medium tomatoes
1/2red oniondiced (about 1/2 cup)
1jalapeñosseeded and diced
2garlic clovesminced
1/3cupchopped cilantro leaves
1limelarge-juiced
½cupdiced bell pepperseeded
1/4teaspoonsmoked paprika
salt to taste
Instructions
Start by washing and prepping all the ingredients.
Add the diced ingredients to the bowl. (1 large mango, 1 cup diced cherry tomatoes, 1/2 red onion, 1 jalapeños, 2 garlic cloves, 1/3 cup chopped cilantro leaves, ½ cup diced bell pepper).
Drizzle the 1 lime juice and add in the 1/4 teaspoon smoked paprika and salt to taste. Mix to combine. Adjust the salt and lime if needed.

Notes
Adjust the lime juice and salt to your taste.
Use ripe but firm mangoes for the best texture.
For extra heat, add additional jalapeño or a pinch of cayenne pepper.
Chill for 15 to 30 minutes before serving if time allows.
Stir before serving if any liquid collects in the bowl.
