These Healthy Applesauce Muffins are an easy one-bowl bake. Featuring whole wheat flour, warming spices, and coconut oil, they're naturally sweetened with applesauce and honey for a wholesome breakfast, snack, or dessert.
Preheat the oven to 350°F and line a 12-cup muffin pan with liners or lightly grease it.
In a large bowl, whisk together the 1 cup unsweetened applesauce, 2 large eggs, ¼ cup honey or maple syrup, ¼ cup melted coconut oil, and 1 teaspoon vanilla extract.
In a separate bowl, combine the 1 cup whole wheat flour or oat flour, 1 cup all-purpose flour, 1/2 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt.
Add the dry ingredients to the wet ingredients and stir until just combined.
Divide the batter evenly among the muffin cups.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.

Storage: Store cooled muffins in an airtight container at room temperature for up to 3 days. Alternatively, individually wrap in plastic wrap, then store in an airtight container in the freezer for up to 3 months. If frozen, thaw at room temperature before eating.
