Simple and tasty spinach salad recipe made with fresh spinach and topped with grilled chicken feta cheese, and olives. Served with an easy homemade salad dressing.
In a small bowl, whisk all the dressing ingredients (1/4 cup olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon maple syrup, 1 teaspoon garlic powder, and Kosher salt and pepper) until emulsified. Add in the 1 red onion (sliced) and allow it to marinate until the salad is ready. Slice the grilled chicken and the apples.
In a large salad bowl, add the 4 cups packed spinach, 1 pound grilled chicken breast, 1 large apples of choice, and 1/2 cup sliced olives. Top with the marinated onions and the dressing that's resting at the bottom of the bowl.
Toss and top with 1/2 cup crumbled feta cheese.
Notes
use any greens of your choice if you do not like spinach
top with another choice of protein like grilled salmon or shrimp
