These Greek Beef Meatballs are made with lean ground beef, feta, fresh herbs, garlic, and lemon zest, then served with homemade tzatziki and fresh Mediterranean-style toppings.
In a large bowl, combine the 2 pounds lean ground beef, 2/3 cup panko breadcrumbs, 1 large egg, 2/3 cup crumbled feta cheese, 1 small shallot, 4 garlic cloves, 2 tablespoons chopped fresh parsley, 1 teaspoon dried oregano, 2 tablespoons chopped fresh dill, 2 tablespoons fresh mint, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon lemon zest, 1 teaspoon fine salt, and ½ teaspoon black pepper. Mix gently until combined.
Using slightly damp hands, roll the mixture into 35-36 meatballs.
Heat the 2 tablespoons olive oil in a large skillet over medium heat. Add the meatballs in a single layer and cook for 8-10 minutes, turning every couple of minutes, until they're evenly browned on all sides.
Reduce the heat to medium-low, cover the skillet, and continue cooking for another 5 to 6 minutes, or until the meatballs reach an internal temperature of 160°F.
While the meatballs cook, stir together the 1 cup full-fat Greek yogurt, ½ cup grated cucumber, 1 garlic clove, 1 tablespoon lemon juice, 1 tablespoon chopped fresh dill, 1 tablespoon chopped fresh mint, 1 tablespoon extra-virgin olive oil, ¼ teaspoon salt, and ¼ teaspoon black pepper. Refrigerate until ready to serve.
For the bowls, divide 3 cups cooked bulgur wheat or rice among four serving bowls. Arrange the tomatoes (2 cups chopped tomatoes), 1 English cucumber, ½ small red onion, and 1 cup cubed feta cheese around the edges.
Add the warm meatballs, drizzle generously with tzatziki, and garnish with Fresh parsley or dill for garnishKalamata olives, and a squeeze of lemon or Lemon wedges.
