These crispy Air Fryer Potatoes are seasoned with garlic, herbs, and Parmesan, then air-fried until perfectly golden on the outside and fluffy on the inside. They're an easy, family-friendly side dish that pairs with just about any meal.
2tablespoonschopped fresh parsley or fresh herbs of choice
Instructions
Place the halved 1½ pounds baby potatoes in a large microwave-safe shallow dish (arrange with minimal overlapping). Cover with a microwave-safe plate or lid and microwave for 6 to 10 minutes, or until the potatoes are just fork-tender. Make sure you check after 5 to 6 minutes by piercing with the tip of a paring knife. Give them a stir and microwave further, if needed. When done, drain off any moisture and let them sit for 2 to 3 minutes so excess steam can escape.
Meanwhile, stir together the 2 tablespoons olive oil, 3 garlic cloves (minced), 1 teaspoon dried thyme, 1 teaspoon paprika, ¾ teaspoon salt, and ½ teaspoon black pepper.
Add the warm potatoes to the bowl and gently toss until every piece is evenly coated in the seasoned oil.
Arrange the potatoes in a single layer in the air fryer basket. (If you cut them, arrange with the cut sides facing down as much as possible.
Air fry at 390°F for 12 to 15 minutes, shaking the basket halfway through, until the potatoes are deeply golden and crispy on the outside.
Transfer the potatoes to a serving bowl while they're still hot. Immediately sprinkle over the ½ cup finely grated Parmesan cheese and toss gently so the residual heat melts the cheese onto the potatoes.
Finish with 2 tablespoons chopped fresh parsley and serve immediately.
Notes
Serving Size: About 1 cup
Microwaving the potatoes first helps them cook faster and creates an extra crispy exterior in the air fryer.
Be sure to let the potatoes sit for a couple of minutes after microwaving so excess steam can escape. This helps them crisp up better.
Avoid overcrowding the air fryer basket. Cook in batches if needed for the crispiest potatoes.
Toss the potatoes with the Parmesan while they're still hot so the cheese melts and sticks to the potatoes.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
