This Easy Hamburger Soup is made with lean ground beef, potatoes, vegetables, and a rich tomato broth for a hearty one-pot meal that's perfect for busy weeknights and makes delicious leftovers.
Heat 1 tablespoon Olive Oil in a large stockpot over medium heat.
Add the 1 pound Lean Ground Beef and cook, breaking it up with a wooden spoon, for 5-6 minutes. Drain the excess fat.
Stir in 1 Sweet Onion, 2 Celery Stalks, 2 Medium Carrots, 1 Bell Pepper, 1 Cup Green Peas, and 2-3 Garlic Cloves. Cook, stirring frequently, for another 5 minutes, or until veggies soften.
Add the 2 tablespoons Worcestershire Sauce, 5 Cups Low-Sodium Beef Broth, 14 ounces Diced Tomatoes with juice, and 1 teaspoon Dried Oregano. Give it a good mix, then reduce the heat and simmer for 15-20 minutes. Season with Sea salt and pepper if needed.
