Italian Seasoning
Sea salt and pepper, to taste

lemon
zest and juiced

Grated Parmesan Cheese
Fresh thyme to garnish
Instructions
Add all the ingredients, except for Parmesan cheese, lemon juice, and zest, to the slow cooker.
Cook on LOW for 7-8 hours, or HIGH for 3-4 hours.
Once the time is up, stir in the remaining ingredients: Parmesan cheese, lemon juice, and zest.
Season with salt and pepper to taste, and garnish with fresh thyme and more lemon or lime if desired. Enjoy while hot!
Notes
use any oil of choice
you may add any other veggies
chop mushrooms smaller if you like
to keep this vegetarian use vegetable broth.
for a vegan option: use dairy-free cheese or skip it entirely.
