Instructions
Preheat the oven to 425F and line a large baking dish with parchment paper.
Prepare your station: place the flour in a shallow dish, and whisk the eggs in a bowl. In a second dish, combine the breadcrumbs with seasonings.
Cut the avocado into 1/2” thick wedges. Squeeze over fresh lemon juice and sprinkle with lemon zest, salt and pepper, to taste. Gently coat each piece with the lemon juice, to prevent it from browning.
Dredge the avocado wedges in flour, then dip into the beaten eggs.
Transfer to the bread crumb mixture and completely coat on all sides.
Place the coated avocado fries on the prepared baking sheet and spray with cooking oil spray.
Bake for 9-10 minutes, or until brown and crispy.
Notes
Season with your favorite seasonings! Some that would taste amazing on these avocado fries are cajun or creole seasoning, chili powder, hot paprika, taco seasoning, and Old Bay seasoning.
The easiest way to remove avocado from its peel is to slice it in half around its seed, and then take a large spoon and scoop the flesh out around the edges keeping it in one piece. You can also slice the avocado into "fries" before scooping the flesh out.
Do not use avocados that are too ripe. They need to be firm to the touch.
Allow the avocado fries to cool before eating them. They will be hot inside!
You can serve these as an appetizer, side dish, snack, or (my favorite) as tacos in a tortilla topped with cheese, salsa, cilantro, and sour cream. They make the best tacos!
