For an easy, high-protein breakfast option, these cottage cheese egg bites are a great idea. They're endlessly customisable, making them perfect for healthy meal prepping.
In a large jug, whisk the 6 large eggs with the 1/4 cup milk of choice.
Add in the 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 4 ounces turkey deli (chopped), 1/2 cup shredded cheddar cheese and 1/2 cup cottage cheese. Season with Kosher salt and black pepper. Whisk to combine.
Divide the mixture among your 12 silicone muffin cups and bake in the preheated oven for 18-22 minutes, until the eggs are set.

Tips:
Use a silicone muffin pan or silicone molds. They're naturally non-stick, so they will help release your egg bites from the pan with a breeze.
Let them cool for a few minutes before removing from the pan. As they cool, they'll firm up, which will make it easier to unmold the bites.
If you're meal prepping these, you can keep them in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 30-45 seconds until piping hot in the middle.
Substitutes:
Use ricotta in place of the cottage cheese
Swap out cheddar for Gruyere or Parmesan, or use crumbled feta or goat's cheese instead.
Use cooked and crumbled turkey sausage in place of the ham (or leave it out for a vegetarian version).
