1/2cupmashed avocadofresh works, one large avocado
4slicesof sourdough bread
4-5tablespoonsmayonnaise
1tablespoonolive oilor avocado oil
Instructions
In a medium bowl whisk the 4 tablespoons chipotle adobo sauce, 2 tablespoons ketchup, 1 tablespoon honey, and 1 teaspoon vinegar.
Add in the 1 cup shredded cooked chicken, 1/2 cup of the 1 cup shredded cheddar cheese, and stir very well to combine.
Spread one side of your slices with 4-5 tablespoons mayonnaise and place them mayo-side down on a chopping board. Spread the other side with 1/2 cup mashed avocado
Divide the chicken + cheese mixture among 2 of your 4 slices of sourdough bread. Sprinkle the remaining cheese. Then top with the remaining slices of bread, mayo-side up.
Heat a non-stick pan over low heat and drizzle with 1 tablespoon olive oil. Add the sandwiches and cook for 3-4 minutes per side, until golden and the cheese inside is fully melted.
Serve the sandwiches warm.
