Incredible Baked Smashed Sweet Potatoes are crispy on the outside and soft and creamy on the inside! They're simple to make with just sweet potatoes, oil, garlic, and seasonings. This savory sweet potato recipe is a wonderful side dish that pairs well with almost any main course.
Preheat the oven to 375ºF and line a medium sheet pan with parchment paper.
To prepare the sweet potatoes, trim off the ends and discard; cut each in half crosswise. Then, each half into quarters and place them on the prepared sheet pan.
Bake the sweet potatoes for 20-25 minutes or until softened. Allow them to cool for a bit as you prepare the seasoning mix.
In a small bowl, combine the oil, garlic, parsley and basil.
Lightly smash each sweet potato piece as shown in the photos, until it's 1/4-inch flat. Work gently as they can easily break.
Baste each with the seasoned oil mixture and sprinkle with salt and pepper to your taste.
Turn your oven to broil, and broil the smashed potatoes for 8-10 minutes, or until golden brown with crispy edges.
Notes
Storing leftovers: Place any leftover potatoes in an airtight container, in the fridge for 4 to 5 days.
Reheating: Reheat at 375˚F in an oven or air fryer until warmed through, about 10-15 minutes. Or heat them up in a skillet on the stovetop with a little bit of butter or oil over medium heat until warmed through. You can microwave them, but they won't crisp back up as well.
