Preheat the oven to 400°F and line a medium sheet pan with parchment paper.
Lay the green beans into the prepared pan and toss with the minced garlic, salt, pepper and olive oil. Make some space in the middle to add the salmon filets.
In a small bowl, whisk the mustard, maple syrup, garlic, lime juice, and a pinch of salt and pepper. Drizzle this mixture over the salmon and evenly coat on all sides.
Bake for 15-17 minutes, or until the salmon is flaky and the beans are tender.
Notes
Instead of maple syrup, you can use agave nectar or honey.
Feel free to use different proteins like chicken breasts, chicken thighs, wings, shrimp, tilapia, crispy tofu, etc.
Use asparagus, Brussels sprouts, broccolini, or your choice of green veggie in place of the fresh green beans.
Store any leftovers in an airtight container in the refrigerator for up to four days. Reheat the leftovers in the microwave on a microwaveable plate or in the oven on a sheet pan.
Make homemade salmon patties with your leftover salmon filets.
