Preheat the oven to 325ºF and line a large sheet pan with parchment paper.
In a bowl, combine the dry ingredients: 1 cup old-fashioned oats, 1 cup whole wheat flour, 1 1/2 teaspoons baking powder, 1 1/2 teaspoons ground cinnamon, 1/2 teaspoon ground nutmeg, and pinch of fine kosher salt.
In a second bowl, whisk all the wet ingredients: 2 tablespoons melted coconut oil, 1 large egg, 2 teaspoons vanilla extract, and 2/3 cup agave syrup . Add the dry over the wet and stir until combined.
