Instructions
Preheat the oven to 350°F and line an 8 ½ x 4 ½ inch loaf pan with parchment paper. In a mixing bowl, mash the

Add the
3 large eggs

2 teaspoons vanilla extract
,
2 tablespoons coconut oil
, and
1/2 cup sugar
. Whisk until well combined.
Add the
2 ½ cups packed blanched fine almond flour
,
1 teaspoon baking powder

1 teaspoon baking soda
, and
1/4 teaspoon Salt
. Stir to incorporate.
Fold in the
1/2 cup dark mini chocolate chips
until evenly distributed throughout the batter.
Transfer the batter to the prepared loaf pan. Sprinkle with extra chocolate chips, if desired.
Bake for 45-55 minutes, until a toothpick inserted comes out clean. Allow the bread to completely cool in the loaf pan before slicing.
