Avocado Chicken Salad Pinwheels

Avocado Chicken Salad Pinwheels are the perfect party food, snack, or easy lunch! They are simple to make with a delicious mixture of avocado, shredded chicken, feta cheese, black olives, red onion, and herbs, rolled up in tortillas and sliced. A tasty make-ahead appetizer everyone will love!

Ingredients

  • 1 ripe avocado
  • 1 lime juiced
  • 1 garlic clove pressed
  • 2 tbsp mayonnaise lite, or greek yogurt
  • 1/2 tsp chili flakes
  • 1 1/2 cups shredded cooked chicken
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced black olives
  • 1/2 small red onion finely diced
  • 2 tbsp fresh parsley minced
  • Kosher salt and pepper to taste
  • 4 large wheat tortillas

Instructions

  • Mash the avocado in a medium bowl. Add the lime juice, garlic, mayo and chili flakes. Stir to combine. Take 2 spoonfuls of mixture and spread over one of the tortillas.
  • Sprinkle it with chicken, feta cheese, olives, red onion and parsley. Season with a pinch of salt and pepper. Repeat with the remaining tortillas.
  • Roll the tortillas tightly, then slice into 1⁄2 inch slices.

Notes

Store any leftovers in an airtight container in the fridge for up to 2 days. We do not recommend freezing these rollups.
