Air Fryer Parmesan Zucchini Fries

Zucchini fries coated with parmesan cheese, herbs, and breadcrumbs, and then air fried until crispy brown.

Ingredients

  • Avocado oil cooking spray
  • 4 small zucchini halved and quartered lengthwise
  • ½ cup Parmesan cheese finely grated
  • ½ cup Panko breadcrumbs
  • 2 tsp Italian seasoning
  • Kosher salt and ground pepper to taste
  • 2 tbsp fresh parsley finely chopped

Instructions

  • Prepare and cut the zucchini into fries or the shape of your choice. Preheat air-fryer if needed for 5 minutes.
  • To a shallow plate, combine the parmesan cheese, Panko, Italian seasoning, salt, and pepper.
  • Spray the zucchini with avocado oil or any other spray oil of choice, then gently press each into the Parmesan mixture to evenly coat on all sides.
  • Spray a bit of oil on the bottom of your air fryer and air fry them at 400F for 8-10 min, or until golden and crisp on the outside or until golden brown.
  • Garnish with freshly chopped parsley and enjoy!

Notes

  • serving size is the amount of one zucchini made into fries- about 1 cup
  • Low carb and keto option: use pork rinds instead of breadcrumbs
  • Vegan-option: use dairy-free shredded cheese.
  • Shape zucchini into any shape you like. They can be cut into bigger sizes or round in shape.
  • Use any breadcrumbs of your choice.
  • Any oil spray will do if you don't have avocado oil spray.
  • Shred your own parmesan cheese is possible
  • If you don't have an air-fryer you can bake these at 400F for 18-20 minutes or until crispy.
  • Air fry them in batches.
  • Serve with any dipping sauce like ketchup, ranch dressing, or marinara sauce.
