Air Fryer Zucchini Chips

Ingredients

  • Cooking spray
  • 1 large zucchini sliced into ¼ inch thick rounds
  • ½ cup parmesan cheese grated
  • Ground pepper and salt to taste

Instructions

  • Cut the zucchini into very thin slices using a mandolin.
  • salt the zucchini lightly. Allow them to sit for a few minutes. Absorb the excess water with paper towels, then season with ground pepper.
  • Lightly spray the inside tray of the air fryer with avocado oil cooking spray.
  • Lay the zucchini slices, then sprinkle the Parmesan cheese over them.
  • Set the air fryer to 370°F. Cook in batches, for 8-10 minutes, or until the cheese is golden brown and zucchini is crispy to your liking.
  • Let it cool for 2-3 minutes into the tray, to crisp up even more.

Notes

  • any cooking spray of choice will work.
  • slice the zucchinis thin. You can use a mandolin
  • freshly grate your own parmesan if you can
  • don't forget to remove the excess moisture off the zucchini with paper towels.
