Cucumber Tomato Feta Salad

Simple salad made with fresh cucumbers, tomatoes, and feta. Easy, quick, and ready in 15 minutes.

Ingredients

  • 1 lb Roma tomatoes
  • 4-5 garden cucumbers
  • 1 small red onion
  • 1/4 cup parsley
  • 6 oz feta cheese

For the dressing:

  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves minced
  • 1/4 tsp ground cumin
  • Sea salt and ground pepper to taste

Instructions

  • To a small jar, add all the dressing ingredients and shake vigorously to emulsify.
  • Chop the tomatoes and cucumbers, slice the onion, mince the parsley and crumble the Feta cheese.
  • To a salad bowl, add all the prepped ingredients and pour over the dressing. Toss well to combine.
  • Garnish with extra cheese and serve immediately.

Notes

  • use fresh vegetables
  • you can use avocado oil instead of olive oil
  • make the dressing ahead if you prefer.
  • Store leftovers in an airtight container for 3 days
