2 tablespoons olive oil 1 pound chicken breast boneless; skinless Kosher salt to taste pepper to taste 3 shallots finely chopped 2 garlic cloves 1 cup chicken broth low sodium 4 ounces cream cheese 1 chipotle pepper in adobo sauce; finely chopped 1 tablespoon fresh cilantro finely chopped; more for garnishment lime wedges for serving
Heat the oil in a large skillet over medium heat.
Season the chicken with salt and pepper and cook it for 6-8 minutes per side, or until brown and no longer pink in the center. Set aside.
To the same preheated skillet, add the shallots and garlic. Saute for 3-4 minutes, or until the onion has softened.
Pour the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for 4-6 minutes, or until reduced by half.
Stir in the cream cheese and chipotle pepper. Whisk well to obtain a creamy sauce.
Return the chicken to the pan and cook for 4-6 minutes more, or until the sauce is bubbly and the chicken is heated through.
Garnish with fresh chopped cilantro and serve with lime wedges.
Be sure to cook the chicken to at least 165 degrees Fahrenheit.
Store the leftovers in an airtight container in the refrigerator for up to four days.
