Grilled Greek Chicken Kabobs

Simple and easy to make Greek-style chicken kabobs topped with feta cheese, fresh herbs, and tomatoes.

Ingredients

Marinade:

  • ½ cup plain Greek yogurt
  • ¼ cup extra-virgin olive oil
  • 2 tbsp green olive tapenade
  • 1 tbsp white wine/balsamic vinegar
  • 2 tbsp fresh oregano leaves chopped (or 2 teaspoons dried)
  • 2-3 garlic cloves minced
  • Kosher salt and ground pepper to taste

Skewers:

  • 1 lb boneless skinless chicken breasts, cut into 2-inch pieces
  • 1 large red bell pepper seeded and cut into 1 ½-inch cubes
  • 1 large red onion cut into 1 ½-inch cubes
  • 8 skewers
  • To serve: crumbled feta cheese

Instructions

  • To a large bowl, add all the marinade ingredients and mix well to combine.
  • Add the pieces of chicken and toss to get evenly coated. Marinate into the fridge for up to 1 hour.
  • To assemble the skweres, thread a piece of chicken, followed by a piece of pepper and onion. Repeat with the rest of the ingredients; you should get around 8 skewers.
  • Meanwhile, heat a grill pan or the outside grill to medium-high heat.
  • Grill the skewers for 6-8 minutes in total, or until the chicken is fully cooked through.
  • Serve them with crumbled feta cheese and enjoy!

Notes

  • Use chicken breast. You may use boneless chicken thighs but we much prefer using chicken breast.
  • Red peppers can be substituted with any of the bell pepper. Yellow, green, or orange will work.
  • Onion: we used red/purple onion, if you can't find any just use any onion.
  • Do not overcook the chicken so it doesn't dry out and get rubbery.
  • Any yogurt would work as well instead of Greek yogurt.
  • Soak the wooden skewers for a good 15-20 minutes to preventing them from burning.
  • Green olive tapenade could be an optional ingredient but adds a great taste.
  • Store leftovers in an airtight container in the fridge for up to 3 days
  • You can prepare this ahead. Marinate the chicken a day before.
