Easy tomato salad with mozzarella pearls tossed in with a delcious citrus herb dressing.

- 1 1/2 lbs grape tomatoes or cherry tomatoes halved
- 8 oz mini mozzarella balls
Dressing:
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 garlic clove minced
- 2 tsp honey
- 1/4 cup fresh parsley chopped
- 1/2 tsp dried oregano
- Kosher salt and ground pepper to taste
To a small jar, add all the dressing ingredients and shake vigorously to emulsify.
In a medium bowl, add the halved tomatoes and mozzarella balls.
Drizzle with the prepared dressing and toss to combine.
Refrigerate for at least 15 minutes to allow the flavors to meld.
- Use any tomatoes. We highly recommend using cherry or grape tomatoes. They are sweet, crunchy, and perfect for this salad.
- Oil: we used olive oil but other oils like grapeseed oil or avocado oil will work
- vinegar: we used red wine, but you may use white or balsamic.
- use fresh garlic and not garlic powder
- fresh parsley is preferred but if in a pinch use dried parsley
