You're going to love this Italian Chicken Caprese recipe! Perfectly flavorful and juicy chicken is paired with fresh mozzarella slices, tangy balsamic vinegar, and fresh tomatoes for a satisfying meal.
2boneless skinless chicken breastslarge, (around 8 oz each), cut in half lengthwise
4slicesmozzarella cheese
2cupscherry or grape tomatoesquartered
¼ cupfresh basilchopped
Instructions
Add all the dressing/marinade ingredients to a small jar and shake vigorously to emulsify.
Place the chicken in a shallow dish and pour over half of the balsamic marinade. Reserve the remaining half untouched to use later.
Toss the chicken into the marinade to completely coat.
Allow the chicken to marinate for 20-30 minutes.
Preheat a non-stick skillet over medium heat. Add the marinated chicken and cook for around 10-12 minutes, flipping halftime. A meat thermometer inserted into the center of each breast should read 165F when the chicken is cooked through.
Once the chicken is done cooking, top with mozzarella slices.
Drizzle with the remaining untouched dressing and allow it to bubble for a few minutes, until the sauce reduces and the cheese is melted.
Take off the heat and top with tomatoes and fresh basil.
Notes
Serving size: one chicken breast
Make sure the chicken is cooked to 165 degrees Fahrenheit. Additionally, you can use a meat thermometer.
Alternatively, maple syrup can be used in place of honey.
Store the leftovers in an airtight container in the refrigerator for up to four days.
Feel free to use boneless chicken thighs.
