Oatmeal Bars

Oatmeal granola bars made with a variety of nuts and fruits and takes just 30 minutes to make.

Ingredients

  • 1 cup rolled oats
  • 1/3 cup raw honey
  • 1/4 cup pistachios roughly chopped
  • 2 tbsp coconut oil melted
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • 1/4 cup golden raisins
  • 1/4 cup dried cranberries
  • 1/4 cup pitted Medjool dates roughly chopped

Instructions

  • Preheat the oven to 325F and line a square 8x8 cake tin with parchment paper.
  • In a mixing bowl add all the ingredients and mix thoroughly to combine. The mixture should be a bit wet and hold together when pinched.
  • Transfer the oat mixture to your prepared cake tin and press into an even layer.
  • Bake at 325F for 20 mins, then allow it to cool completely before cutting into squares.
  • Store in an airtight container for up to 3 days.

Notes

  • Honey: you may replace the honey with maple syrup for a vegan-friendly option.
  • Oats: we recommend using rolled oats, not quick oats or steel-cut oats.
  • Fruits and nuts: use your favorite fruits and nuts to make this oatmeal granola recipe. You can get as creative as you like.
  • Allow the baked granola bars to cool off completely before cutting them up.
  • Storing: Place the cooled granola bars in a tightly sealed container before storing them in the fridge for up to 3-4 days
