Low Carb Zucchini Pizza Boats

This healthier take on pizza is made in under 30 minutes. They are a delicious, low-carb dinner idea that is family friendly and so easy to make.

Ingredients

  • 4 small zucchini
  • 1 Tbsp olive oil
  • 1 tsp garlic salt or more to taste
  • 1/4 tsp pepper
  • 1/2 cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/3 cup sliced mini pepperoni or turkey pepperoni

Instructions

  • Preheat your oven to 400F and line a baking sheet with parchment paper.
  • Cut zucchini into half lengthwise and scrape out the insides with a small spoon. Arrange the zucchini cut side up into the prepared baking sheet.
  • Drizzle with olive oil and season with garlic salt and pepper.
  • Spoon marinara/pizza sauce into each zucchini then top with shredded mozzarella and pepperoni.
  • Bake for 15-18 minutes, or until zucchini are fork tender and cheese is bubbly.
  • Garnish with fresh chopped parsley if desired and enjoy!

Notes

  • Shred your own cheese if you can
  • Don't feel like you are bound to mozzarella cheese, you can use any type of cheese for your pizza boats.
  • Finely dice some red or yellow bell pepper and sprinkle them on top of your zucchini pizza boats for more veggie goodness!
  • Top with some fresh herbs like basil for extra herby flavors.
  • Feel free to top with your favorite pizza toppings to change things up such as red onions, mushrooms, olives, sausage, pineapple, ham, and more.
  • Store leftovers in an airtight container for 3-4 days. Do not freeze
