Line the air fryer basket with aluminum foil and preheat the air fryer to 360 degrees F.
Cut the chicken breast into half and place them between two sheets of plastic wrap and gently pound with the flat side of meat mallet or a rolling pin. Pound each piece into thin pieces.
Set up a plate with panko breadcrumbs and parmesan cheese.
Whisk eggs in a bowl until frothy. Now dunk each chicken breast into the beaten egg and then into the breadcrumb mixture.
Arrange the chicken into the air fryer basket, shaking off any excess bread crumbs. Cook for 6 minutes, flipping halfway through with a tong. Try to cook in batches if needed.
Once golden, spread a spoonful of marinara sauce on top of each chicken. Sprinkle mozzarella cheese on top and continue cooking for additional 4 minutes until cheese melts or internal temperature reads 165 degrees F.
Once the chicken is done, transfer it to a serving dish. Garnish with fresh basil and serve warm.
Oven-Method:
Preheat the oven to 400°F and line baking sheet with parchment paper.
Place the breadcrumbs coated chicken onto the prepared baking sheet and bake for 12-15 minutes, flipping halfway through to ensure even browning.
Add a spoonful of marinara sauce on one side of the chicken and sprinkle shredded cheese on top.
Flip the oven to broiler and broil on high for just 2-3 minutes until cheese is hot and bubbly. Once the chicken is done, transfer it to a serving dish.
