Ingredients

  • 1.5 lb Chicken Breast boneless skinless
  • ¼ Cup Shredded Parmesan
  • 1 Cup Panko Breadcrumbs
  • 2 Egg beaten
  • ½ Cup Marinara Sauce
  • ½ Cup Mozzarella Cheese
  • a handful of fresh basil leaves to garnish

Instructions

Air-Fryer method:

  • Line the air fryer basket with aluminum foil and preheat the air fryer to 360 degrees F.
  • Cut the chicken breast into half and place them between two sheets of plastic wrap and gently pound with the flat side of meat mallet or a rolling pin. Pound each piece into thin pieces.
  • Set up a plate with panko breadcrumbs and parmesan cheese.
  • Whisk eggs in a bowl until frothy. Now dunk each chicken breast into the beaten egg and then into the breadcrumb mixture.
  • Arrange the chicken into the air fryer basket, shaking off any excess bread crumbs. Cook for 6 minutes, flipping halfway through with a tong. Try to cook in batches if needed.
  • Once golden, spread a spoonful of marinara sauce on top of each chicken. Sprinkle mozzarella cheese on top and continue cooking for additional 4 minutes until cheese melts or internal temperature reads 165 degrees F.
  • Once the chicken is done, transfer it to a serving dish. Garnish with fresh basil and serve warm.

Oven-Method:

  • Preheat the oven to 400°F and line baking sheet with parchment paper.
  • Place the breadcrumbs coated chicken onto the prepared baking sheet and bake for 12-15 minutes, flipping halfway through to ensure even browning.
  • Add a spoonful of marinara sauce on one side of the chicken and sprinkle shredded cheese on top.
  • Flip the oven to broiler and broil on high for just 2-3 minutes until cheese is hot and bubbly. Once the chicken is done, transfer it to a serving dish.
  • Garnish with fresh basil and serve warm.
