½lbShrimppeeled and deveined
¼CupChicken Broth
2TspLemon Juice
1TbspChopped Parsley
Instructions
Heat the olive oil in a large pan over medium-high heat.
Add the onion and bell peppers to the pan. Cook for 4-5 minutes or until tender. Add the garlic and cook for 30 seconds.
Season the vegetables to taste, then remove from the pan and keep warm. Add the shrimp and sausage to the pan; sprinkle with Cajun seasoning and salt and pepper.
Cook until shrimp are pink and opaque and sausage is heated through 3-4 minutes. Add the vegetables back to the pan.
Stir in the chicken broth and lemon juice; simmer for 2-3 minutes. Top with parsley and serve.
