Gluten Free Eggnog Waffles

Easy to make a Gluten-free waffle recipe with a little holiday twist that will put a smile on your face with every bite.

Ingredients

  • 2 Eggs Large
  • 1 Cup Eggnog
  • 1 Ripe Banana Mashed
  • 1/4 Cup Honey
  • 1/4 Cup Olive Oil
  • 2 Cup Gluten-free Baking Flour
  • 1/2 Tsp Baking Powder
  • 1 Tsp Vanilla Extract
  • 1 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1/8 Tsp Salt

Instructions

  • Prepare a waffle iron with non-stick spray and turn on high heat.
  • In a mixing bowl, beat the eggs, mashed banana, eggnog, honey, olive oil, and vanilla until smooth.
  • Add in the flour, baking powder, cinnamon, nutmeg and salt, and mix until batter forms. If the batter is too thick to pour, add another 2-3 tablespoons eggnog, this will depend on the brand of flour.
  • Pour the batter into the center of the waffle iron use a spatula to spread the batter evenly.
  • Cook until golden brown. Repeat until you have used all the batter.

Notes

Non Stick Waffles. The amount of oil or butter in your batter will determine whether or not your waffles will stick to your waffle maker. If you are consistently making waffles that stick, try increasing the oil or butter.
For Super Fluffy Waffles. If a light and fluffy waffle interior is important to you, separate your eggs. Add the beaten yolks to the wet ingredients of your batter. Then, beat the egg whites until stiff peaks form. Fold the eggs whites gently into the final batter using a spatula.
Don't Lift The Lid Too Early. If you lift to peek at the waffles too early you may rip them. Wait until the light goes off. If your waffle maker doesn't have a doneness indicator, watch the steam coming out of the unit as you cook.
Serving Waffles At The Same Time. Unless you have half a dozen waffle makers, you'll find it hard to serve them all at the same time! Make your waffles and store them in the oven to 250 degrees. A short time in the oven also helps a crispiness!
