Healthy Garlic Oven Roasted Mushrooms Recipe

This recipe for healthy, oven-roasted Garlic Mushrooms is ready in about 30 minutes and filled with the best tender and earthy flavors. Baked mushrooms and crispy garlic are fused together and tossed with fresh herbs, olive oil, salt, and pepper for the easiest gluten-free side dish that is made on a sheet pan!

Ingredients

  • 1 pound Button Mushrooms Cleaned
  • 3 Tablespoons Olive Oil
  • 6-8 Garlic Cloves Peeled
  • a pinch of salt and pepper
  • Fresh chopped thyme to taste or Parsley

Instructions

  • Preheat the oven to 400F.
  • In a large bowl add all the ingredients and mix to combine. You can mince 2 of the garlic cloves and add to the mixture and leave the others whole.
  • Place them on a baking sheet in a single layer and roast for about 20 minutes, mixing halfway through.
  • Garnish with more fresh thyme and enjoy!

Notes

  • Instead of olive oil, you can use avocado or grapeseed oil.
  • Top these mushrooms with parmesan cheese for extra savoriness.
  • Dip the mushrooms into your favorite dipping sauces.
  • Store the leftovers in the refrigerator in an airtight container for up to four days. Reheat the mushrooms in the microwave or oven.
  • Instead of roasting the garlic whole, you can mince the garlic and toss it with the mushrooms.
  • For garlic roasted mushrooms and onions add red, yellow, or white onions to the sheet pan to bake.
  • Make garlic butter mushrooms by using melted butter in place of the oil.
