Healthy Double Chocolate Brownies

Ingredients

  • 3/4 cup brown rice flour or oat flour
  • 1/2 cup almond flour finely ground
  • 3 tbsp granulated stevia
  • 2 tbsp coconut oil melted
  • 2 1/2 tbsp unsweetened cocoa powder
  • 1 egg room temp
  • 1 egg yolk room temp
  • 2 tbsp pumpkin puree
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Ganache

  • Crushed pecans or walnuts

Instructions

  • Preheat oven to 325F and prepare an 8x8 inch baking pan with parchment paper.
  • In a small bowl, stir together the flours, cocoa powder, salt, baking soda and baking powder until combined. Place the dry ingredients into a mixer and add in the melted coconut oil, egg, egg yolk and pumpkin puree. Using a paddle attachment, mix until a dough forms.
  • Press the dough evenly into the bottom of the prepared pan. Bake for 6-8 minutes.
  • Once cooled, stir together the cocao powder, coconut oil and maple syrup until combined then add in the almond milk to make the ganache. Use a rubber spatula to evenly spread the chocolate over the brownies. Sprinkle with crushed nuts and place in the freezer for 20 minutes to firm up before serving. Store in an airtight container in the fridge.
