Chicken Pomodoro

- 4 boneless skinless chicken breast
- Kosher salt and black pepper to taste
- 1 1/2 tsp dried basil
- 1 tbsp olive oil
- 1 onion finely chopped
- 4-6 garlic cloves finely chopped
- 1/2 cup chicken broth
- 4 medium vine tomatoes chopped
- 1 cup packed fresh basil leaves
Season the chicken with salt, pepper, and dried basil on both sides.
Heat the oil in a large skillet over medium heat. Cook the chicken for 3-4 minutes per side, or until golden and almost cooked through. Set aside.
Sauté the onion and garlic for 3-4 minutes. Stir in the chicken broth and cook until mostly reduced.
Return the chicken to the pan and add the tomatoes and basil. Cook for 5 minutes or until the thickest part of the chicken reaches 165ºF.
- Storing: Store the leftover chicken and sauce in an airtight container in the fridge for up to 4 days. For longer storage, place in a freezer-safe container and freeze for up to 3 months.
- Reheating: Reheat your leftovers in the microwave for 60-90 seconds or until heated through.
