Baked Berries French Toast Casserole
Delicious French Toast Casserole is easy to make with French bread, and a spiced egg custard and is naturally sweetened with honey. Top with berries, and bake to golden brown perfection. Serve with more fresh berries and a dusting of powdered sugar for the ultimate brunch dish!

- 2 loaves French bread
- 8 large eggs
- 1 1/2 cups milk of choice
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 2/3 cup honey or maple syrup
- 1 cup strawberries sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- Optional: 1 tbsp powdered sugar to decorate
Preheat the oven to 350ºF.
Cut the bread loaves into 1-inch cubes and add them to a 9x13 casserole dish.
In a large bowl, use an electric mixer to whisk the eggs, milk, vanilla extract, cinnamon, and honey.
Whisk the mixture until smooth. Pour the mixture into the casserole, over your bread cubes, then gently press to soak into the egg mixture.
Top the casserole with your fresh berries, then cover with cling film and refrigerate for 1 hour or overnight.
Bake the casserole for 35-40 minutes.
Decorate with powdered sugar and more fresh berries, if desired.
- Use any bread of your choice
- You may use 2% milk or dairy-free milk
- If you do not have honey, you can swap it with maple syrup or agave
- Get creative with your toppings, if you prefer not to use berries.
