- Cooking spray
- 1 large zucchini sliced into ¼ inch thick rounds
- ½ cup parmesan cheese grated
- Ground pepper and salt to taste
Cut the zucchini into very thin slices using a mandolin.
salt the zucchini lightly. Allow them to sit for a few minutes. Absorb the excess water with paper towels, then season with ground pepper.
Lightly spray the inside tray of the air fryer with avocado oil cooking spray.
Lay the zucchini slices, then sprinkle the Parmesan cheese over them.
Set the air fryer to 370°F. Cook in batches, for 8-10 minutes, or until the cheese is golden brown and zucchini is crispy to your liking.
Let it cool for 2-3 minutes into the tray, to crisp up even more.
- any cooking spray of choice will work.
- slice the zucchinis thin. You can use a mandolin
